Instructions
- Preheat your air fryer to 400°F (200°C).
- In a shallow dish, combine shredded coconut and panko breadcrumbs.
- In another shallow dish, place the flour. Season with salt and pepper.
- In a third shallow dish, whisk the eggs.
- Pat the shrimp dry with paper towels.
- Dredge each shrimp first in the flour, then dip in the beaten eggs, and finally coat thoroughly with the coconut-breadcrumb mixture.
- Arrange the coated shrimp in a single layer in the air fryer basket. You may need to cook in batches.
- Lightly spray the shrimp with cooking spray.
- Air fry for 8-10 minutes, flipping halfway through, until golden brown and cooked through.
- Serve immediately with your favorite dipping sauce.
