Description
A classic dish featuring bell peppers stuffed with seasoned ground beef and baked until tender.

- 4 large bell peppers (any color)
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 cup cooked rice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, cook the ground beef and onion over medium heat until the beef is browned and the onion is softened. Drain off any excess grease.
- Stir in the garlic, diced tomatoes, cooked rice, salt, pepper, oregano, and red pepper flakes (if using). Cook for 5 minutes, stirring occasionally.
- Spoon the beef mixture evenly into the prepared bell peppers.
- Place the stuffed peppers in a baking dish.
- Bake for 30-40 minutes, or until the peppers are tender.
- Top with shredded cheddar cheese during the last 5-10 minutes of baking.
Notes
- You can use any color of bell peppers you prefer.
- Leftovers can be stored in the refrigerator for up to 3 days.
- For a spicier dish, add more red pepper flakes.
