Easy and delicious blueberry protein muffins perfect for a healthy breakfast or snack.
Ingredients

- 1 cup whole wheat flour
- 1/2 cup vanilla protein powder
- 1/4 cup erythritol or other sweetener
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsweetened almond milk
- 1/4 cup unsweetened applesauce
- 1 large egg
- 1 tsp vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease it.
- In a large bowl, whisk together the whole wheat flour, protein powder, sweetener, baking powder, and salt.
- In a separate bowl, whisk together the almond milk, applesauce, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the blueberries.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a sweeter muffin, add more sweetener to taste.
- You can substitute other berries for blueberries.
- Store muffins in an airtight container at room temperature for up to 3 days.
