Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 cup broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in an oven-safe skillet over medium-high heat. Add chicken and cook until browned.
  3. Stir in uncooked rice and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
  4. Stir in broccoli florets.
  5. In a separate saucepan, melt butter over medium heat. Whisk in flour until smooth. Gradually whisk in milk until thickened to make a sauce.
  6. Stir in cheddar cheese until melted. Season with salt and pepper.
  7. Pour cheese sauce over the chicken, rice, and broccoli mixture in the skillet. Stir gently to combine.
  8. Bake uncovered for 20-25 minutes, or until bubbly and heated through.
