  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped apples (about 1 medium apple)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan or line it with parchment paper.
  2. Melt the butter in a saucepan over medium heat. Continue cooking, swirling occasionally, until the butter turns a golden brown color and smells nutty. This is brown butter. Remove from heat and let it cool slightly.
  3. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
  4. In a large bowl, whisk together the cooled brown butter and brown sugar until well combined.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Fold in the chopped apples and nuts (if using).
  8. Spread the batter evenly into the prepared baking pan.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
  10. Let the blondies cool completely in the pan before cutting into squares.
