Ingredients

- 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/2 cup buffalo sauce
- 1/4 cup ranch dressing
- 12 corn tortillas
- 1 cup shredded Monterey Jack cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- Vegetable oil for frying
Instructions
- In a bowl, toss chicken pieces with buffalo sauce and ranch dressing.
- Heat 1 inch of vegetable oil in a skillet over medium-high heat.
- Fry tortillas one at a time until crisp, about 1-2 minutes per side. Drain on paper towels.
- In a separate skillet, cook chicken mixture over medium heat until chicken is cooked through, about 8-10 minutes.
- Spoon chicken mixture onto half of each crispy tortilla.
- Top with Monterey Jack and cheddar cheese.
- Fold tortillas in half to create chalupas.
- Return to skillet for 1-2 minutes, until cheese is melted.
- Garnish with green onions.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the chicken mixture.
- Serve with extra ranch dressing for dipping.
- You can bake the tortillas instead of frying for a healthier option.
