A rich and creamy potato soup loaded with cheese.
Ingredients
- Potatoes, peeled and diced
- Chicken broth
- Milk
- Heavy cream
- Cheddar cheese, shredded
- Butter
- Onion, chopped
- Garlic, minced
- Salt
- Black pepper
- Optional: Bacon bits, chives for garnish
Instructions
- Melt butter in a large pot over medium heat.
- Add chopped onion and cook until softened.
- Add minced garlic and cook for one minute more.
- Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Puree the soup using an immersion blender or by carefully transferring to a regular blender.
- Stir in milk and heavy cream. Heat gently, do not boil.
- Add shredded cheddar cheese and stir until melted and smooth.
- Season with salt and black pepper to taste.
- Serve hot, garnished with bacon bits and chives if desired.
Notes
- For a thicker soup, use less broth.
- Adjust cheese quantity to your preference.
- Ensure soup is heated gently after adding dairy to prevent curdling.
