Ingredients

  • Potatoes, peeled and diced
  • Chicken broth
  • Milk
  • Heavy cream
  • Cheddar cheese, shredded
  • Butter
  • Onion, chopped
  • Garlic, minced
  • Salt
  • Black pepper
  • Optional: Bacon bits, chives for garnish

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add chopped onion and cook until softened.
  3. Add minced garlic and cook for one minute more.
  4. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. Puree the soup using an immersion blender or by carefully transferring to a regular blender.
  6. Stir in milk and heavy cream. Heat gently, do not boil.
  7. Add shredded cheddar cheese and stir until melted and smooth.
  8. Season with salt and black pepper to taste.
