  • 2 large eggs

  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar, for rolling (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and packed brown sugar until light and fluffy.
  3. Beat in the maple syrup, then the eggs one at a time, followed by the vanilla extract.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. If desired, place the granulated sugar in a shallow dish. Roll rounded tablespoons of dough into balls and then roll each ball in the granulated sugar.
  7. Place the dough balls about 2 inches apart on the prepared baking sheets.
  8. Bake for 10-12 minutes, or until the edges are set and lightly golden brown, but the centers still look slightly soft.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
