Ingredients

  • 8 cups chicken broth
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 2 tablespoons butter, melted

Instructions

  1. In a large pot, combine chicken, chicken broth, onion, carrots, celery, salt, and pepper. Bring to a boil, then reduce heat and simmer for 1 hour, or until chicken is tender.
  2. Remove chicken from the pot and shred. Return shredded chicken to the pot.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. Add milk and melted butter to the flour mixture and stir until just combined. Do not overmix.
  5. Drop spoonfuls of the dumpling batter onto the simmering stew.
  6. Cover the pot and simmer for 15-20 minutes, or until dumplings are cooked through.
  7. Serve hot.
