- 2 cups cooked chicken, shredded
- 1 package (8 ounces) cornbread stuffing mix
- 1 cup chopped celery
- 1 cup chopped onion
- 1/2 cup butter, melted
- 1 1/2 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine shredded chicken, stuffing mix, celery, and onion.
- Drizzle melted butter over the mixture and toss to combine.
- In a separate bowl, whisk together chicken broth, salt, and pepper.
- Pour the broth mixture over the chicken and stuffing mixture. Add parsley and stir until well combined.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Bake for 25-30 minutes, or until heated through and golden brown on top.
Notes
- For a richer flavor, you can add a pinch of poultry seasoning.
- You can substitute cream of mushroom or chicken soup for some of the chicken broth for a creamier casserole.
- Garnish with extra fresh parsley before serving.
