Ingredients

  • 2 cups cooked chicken, shredded
  • 1 package (8 ounces) cornbread stuffing mix
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1/2 cup butter, melted
  • 1 1/2 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, stuffing mix, celery, and onion.
  3. Drizzle melted butter over the mixture and toss to combine.
  4. In a separate bowl, whisk together chicken broth, salt, and pepper.
  5. Pour the broth mixture over the chicken and stuffing mixture. Add parsley and stir until well combined.
  6. Transfer the mixture to a greased 9×13 inch baking dish.
  7. Bake for 25-30 minutes, or until heated through and golden brown on top.

Notes

  • For a richer flavor, you can add a pinch of poultry seasoning.
  • You can substitute cream of mushroom or chicken soup for some of the chicken broth for a creamier casserole.
