- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- 4 large pita breads
- 1 cup shredded lettuce
- 1 cup chopped tomatoes
- 1/2 cup thinly sliced red onion
- 1/2 cup sliced cucumber
- Tzatziki sauce (store-bought or homemade)
Instructions
- In a bowl, combine chicken pieces with olive oil, lemon juice, oregano, thyme, garlic powder, onion powder, salt, and pepper. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
- Cook the marinated chicken in a skillet over medium-high heat until browned and cooked through.
- Warm the pita breads according to package directions.
- Assemble the gyros by spreading tzatziki sauce on each pita.
- Layer with cooked chicken, lettuce, tomatoes, red onion, and cucumber.
- Fold or roll the pita to serve.
Notes
- For extra flavor, grill the chicken instead of pan-frying.
- Add a pinch of paprika to the marinade for a touch of color and smoky flavor.
- Homemade tzatziki sauce can be made by combining Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper.
