Ingredients

  • 1/4 cup water chestnuts, chopped
  • 1/4 cup carrots, shredded
  • 2 tbsp green onions, chopped
  • 1 head lettuce (iceberg or butter lettuce), leaves separated

Instructions

  1. In a bowl, combine ground chicken, soy sauce, and sesame oil.
  2. Heat a skillet over medium-high heat. Add chicken mixture and cook, breaking it up, until browned.
  3. Add ginger and garlic, cook for 1 minute until fragrant.
  4. Stir in water chestnuts, carrots, and green onions. Cook for 2-3 minutes until vegetables are tender-crisp.
  5. Spoon the chicken mixture into lettuce cups.
