Quick and healthy chicken lettuce wraps
Ingredients

- 1 lb ground chicken
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp ginger, minced
- 2 cloves garlic, minced
- 1/4 cup water chestnuts, chopped
- 1/4 cup carrots, shredded
- 2 tbsp green onions, chopped
- 1 head lettuce (iceberg or butter lettuce), leaves separated
Instructions
- In a bowl, combine ground chicken, soy sauce, and sesame oil.
- Heat a skillet over medium-high heat. Add chicken mixture and cook, breaking it up, until browned.
- Add ginger and garlic, cook for 1 minute until fragrant.
- Stir in water chestnuts, carrots, and green onions. Cook for 2-3 minutes until vegetables are tender-crisp.
- Spoon the chicken mixture into lettuce cups.
Notes
- Serve immediately.
- Can be customized with your favorite vegetables.
