Description

A comforting and creamy chicken stew seasoned with paprika.


Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chicken pieces and cook until browned on all sides.
  3. Add onion and cook until softened, about 5 minutes.
  4. Stir in garlic, paprika, salt, and pepper. Cook for 1 minute more until fragrant.
  5. Pour in chicken broth and bring to a simmer.
  6. Reduce heat, cover, and cook for 15-20 minutes, or until chicken is cooked through.
  7. Stir in heavy cream and heat through, but do not boil.
  8. Garnish with fresh parsley before serving.

Notes

  • For a thicker stew, whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the simmering stew before adding the cream.
  • You can add other vegetables like carrots or potatoes along with the onion.
