Description
A comforting and creamy chicken stew seasoned with paprika.
Ingredients

- 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chicken pieces and cook until browned on all sides.
- Add onion and cook until softened, about 5 minutes.
- Stir in garlic, paprika, salt, and pepper. Cook for 1 minute more until fragrant.
- Pour in chicken broth and bring to a simmer.
- Reduce heat, cover, and cook for 15-20 minutes, or until chicken is cooked through.
- Stir in heavy cream and heat through, but do not boil.
- Garnish with fresh parsley before serving.
Notes
- For a thicker stew, whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the simmering stew before adding the cream.
- You can add other vegetables like carrots or potatoes along with the onion.
