Description

A simple and delicious chickpea salad sandwich recipe.


Ingredients

  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1/4 cup mayonnaise
  • 2 tablespoons finely chopped celery
  • 1 tablespoon finely chopped red onion
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon lemon juice
  • Salt and black pepper to taste
  • 4 slices bread
  • Lettuce leaves (optional)

Instructions

  1. In a medium bowl, mash the chickpeas with a fork until mostly broken down.
  2. Add the mayonnaise, celery, red onion, Dijon mustard, and lemon juice to the bowl.
  3. Stir well to combine all ingredients.
  4. Season with salt and pepper to your liking.
  5. Spoon the chickpea salad mixture onto two slices of bread.
  6. Top with lettuce leaves if desired.
  7. Place the remaining two slices of bread on top to make two sandwiches.

Notes

  • For a creamier texture, use full-fat mayonnaise.
  • Add a pinch of paprika for a little color and flavor.
  • You can toast the bread before making the sandwiches.
