A simple and delicious chickpea salad sandwich recipe.
Ingredients

- 1 (15 ounce) can chickpeas, drained and rinsed
- 1/4 cup mayonnaise
- 2 tablespoons finely chopped celery
- 1 tablespoon finely chopped red onion
- 1 teaspoon Dijon mustard
- 1/2 teaspoon lemon juice
- Salt and black pepper to taste
- 4 slices bread
- Lettuce leaves (optional)
Instructions
- In a medium bowl, mash the chickpeas with a fork until mostly broken down.
- Add the mayonnaise, celery, red onion, Dijon mustard, and lemon juice to the bowl.
- Stir well to combine all ingredients.
- Season with salt and pepper to your liking.
- Spoon the chickpea salad mixture onto two slices of bread.
- Top with lettuce leaves if desired.
- Place the remaining two slices of bread on top to make two sandwiches.
Notes
- For a creamier texture, use full-fat mayonnaise.
- Add a pinch of paprika for a little color and flavor.
- You can toast the bread before making the sandwiches.
