Description

Ingredients

  • 3/4 cup granulated sugar
  • 2 cups mascarpone cheese, room temperature
  • 1 1/2 cups strong brewed coffee, cooled
  • 1/4 cup coffee liqueur (optional)
  • 24 ladyfingers
  • Unsweetened cocoa powder, for dusting

Instructions

  1. In a heatproof bowl, whisk together egg yolks and sugar. Place the bowl over a saucepan of simmering water (bain-marie), ensuring the bottom of the bowl does not touch the water.
  2. Whisk constantly until the mixture is pale yellow and has thickened to a ribbon stage, about 5-7 minutes. Remove from heat and let cool slightly.
  3. In a separate bowl, gently whisk the mascarpone cheese until smooth.
  4. Fold the cooled egg yolk mixture into the mascarpone cheese until just combined. Do not overmix.
  5. In a shallow dish, combine the cooled coffee and coffee liqueur (if using).
  6. Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
  7. Arrange a single layer of dipped ladyfingers in the bottom of an 8×8 inch baking dish.
  8. Spread half of the mascarpone mixture evenly over the ladyfingers.
  9. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  10. Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
  11. Before serving, dust generously with unsweetened cocoa powder.

  • Ensure your mascarpone cheese is at room temperature for easier mixing.
  • Do not oversoak the ladyfingers, or the tiramisu will be too wet.
  • For a richer flavor, use a good quality strong coffee.
