Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the wild rice: In a medium saucepan, combine the wild rice and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 45-50 minutes, or until the rice is tender and the liquid is absorbed.
  3. Meanwhile, cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through. Remove chicken from skillet and set aside.

  6. Combine ingredients: Stir in the shredded cheddar cheese and grated Parmesan cheese until melted and smooth. Add the cooked chicken, cooked wild rice, salt, and pepper. Mix well.
  7. Bake the casserole: Pour the mixture into a 9×13 inch baking dish. Bake for 20-25 minutes, or until bubbly and heated through.
