- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup uncooked wild rice
- 4 cups chicken broth

- 1/2 cup all-purpose flour
- 3 cups milk
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese

- 1/4 cup chopped fresh parsley
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the wild rice: In a medium saucepan, combine the wild rice and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 45-50 minutes, or until the rice is tender and the liquid is absorbed.
- Meanwhile, cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Sauté the aromatics: Add the chopped onion to the same skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
- Make the sauce: Melt the butter in the skillet. Whisk in the flour and cook for 1 minute, stirring constantly. Gradually whisk in the milk until smooth. Bring to a simmer and cook, stirring, until the sauce thickens.
- Combine ingredients: Stir in the shredded cheddar cheese and grated Parmesan cheese until melted and smooth. Add the cooked chicken, cooked wild rice, salt, and pepper. Mix well.
- Bake the casserole: Pour the mixture into a 9×13 inch baking dish. Bake for 20-25 minutes, or until bubbly and heated through.
- Garnish and serve: Sprinkle with fresh parsley before serving.

- For a richer flavor, you can use a mix of wild rice and brown rice.
- Add cooked vegetables like broccoli florets or peas for extra nutrition and color.
- If you prefer a thicker sauce, use a little less milk or cook it longer.
