- 2 lbs boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Pat chicken thighs dry.
- Heat olive oil in a skillet over medium-high heat. Sear chicken thighs for 2-3 minutes per side until browned.
- Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Transfer chicken, onions, and garlic to the crockpot.
- Pour in chicken broth.
- Season with thyme, salt, and pepper.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is cooked through and tender.
