Description

Ingredients

  • 4 cups potatoes, peeled and diced
  • 1 cup onion, chopped
  • 4 cups chicken broth
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 2 cups milk
  • 1 cup cheddar cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Place diced potatoes and chopped onion in a crockpot.
  2. Pour chicken broth over potatoes and onions.
  3. Cook on low for 6-8 hours or on high for 3-4 hours.
  4. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  5. Gradually whisk in milk until smooth. Cook until thickened.
  6. Stir the milk mixture into the crockpot.
  7. Add shredded cheddar cheese and stir until melted.
  8. Season with salt and pepper.
  9. Serve hot.

  • For a thicker soup, use less broth.
