Description

A simple and comforting Portuguese kale and potato soup.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 pound potatoes, peeled and diced
  • 1 bunch kale (about 8 cups), stems removed and chopped
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  3. Stir in chopped kale and cook until wilted, about 5 minutes.
  4. Season soup with salt and pepper.
  5. Serve hot, garnished with fresh parsley.

Notes

  • For a smoother soup, you can blend some of the potatoes before adding the kale.
  • Chourico or linguiça sausage can be added for a heartier soup.
