Description
A simple and comforting Portuguese kale and potato soup.
Ingredients
Scale
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 pound potatoes, peeled and diced
- 1 bunch kale (about 8 cups), stems removed and chopped
- Salt and black pepper to taste
- 1/4 cup chopped fresh parsley
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Stir in chopped kale and cook until wilted, about 5 minutes.
- Season soup with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
- For a smoother soup, you can blend some of the potatoes before adding the kale.
- Chourico or linguiça sausage can be added for a heartier soup.
