Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  3. Add uncooked rice to the skillet and stir for 1 minute.
  4. Pour in chicken broth and milk. Bring to a boil.
  5. Stir in Parmesan cheese and garlic powder. Season with salt and pepper.
  6. Return chicken to the skillet.
  7. Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and liquid is absorbed.
  8. Garnish with parsley if desired.
