A simple and comforting chicken and stuffing casserole cooked in a slow cooker.

- 1 pound boneless, skinless chicken breasts
- 1 can (10.5 ounces) condensed cream of chicken soup
- 1/2 cup milk
- 1/4 cup chopped onion
- 1 teaspoon poultry seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 box (6 ounces) stuffing mix (dry bread cubes)
- 1 1/2 cups boiling water
- 2 tablespoons butter, melted
Instructions
- Place chicken breasts in the bottom of a 3-quart slow cooker.
- In a bowl, mix together cream of chicken soup, milk, chopped onion, poultry seasoning, salt, and pepper.
- Pour the soup mixture over the chicken in the slow cooker.
- In a separate bowl, combine the dry stuffing mix with the boiling water and melted butter. Stir well.
- Spoon the prepared stuffing evenly over the soup mixture.
- Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until the chicken is cooked through and the stuffing is tender.
- Shred the chicken with two forks directly in the slow cooker before serving.
Notes
- You can add other vegetables like peas or carrots to the mix.
- For a richer flavor, use cream of mushroom soup instead of cream of chicken soup.
- Ensure the stuffing is fully covered by the liquid for even cooking.
