A simple recipe for authentic Mexican rice, just like you’d find in your favorite restaurant.
Ingredients

- 1 tablespoon olive oil
- 1/2 cup finely chopped white onion
- 1 clove garlic, minced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 (8 ounce) can tomato sauce
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
Instructions
- Heat olive oil in a medium saucepan over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in the rice and cook, stirring, until lightly toasted, about 3-4 minutes.
- Pour in the chicken broth and tomato sauce. Add salt and cumin. Stir to combine.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until liquid is absorbed and rice is tender.
- Let stand, covered, for 5 minutes before fluffing with a fork.
Notes
- For a spicier rice, add a pinch of cayenne pepper.
- You can substitute vegetable broth for chicken broth for a vegetarian option.
