Ingredients

  • 1/2 cup finely chopped white onion
  • 1 clove garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 (8 ounce) can tomato sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin

Instructions

  1. Heat olive oil in a medium saucepan over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in the rice and cook, stirring, until lightly toasted, about 3-4 minutes.
  4. Pour in the chicken broth and tomato sauce. Add salt and cumin. Stir to combine.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until liquid is absorbed and rice is tender.
  6. Let stand, covered, for 5 minutes before fluffing with a fork.

Notes
