A simple and comforting chicken and dumplings recipe made in a slow cooker. This dish features tender chicken and fluffy dumplings in a creamy broth.

- 3 boneless, skinless chicken breasts
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 cup milk
- 1/2 cup butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/4 teaspoon garlic powder
- 1 (10.25 ounce) can condensed cream of chicken soup
- 2 cups biscuit mix
- 1/2 cup milk
Instructions
- Place chicken breasts in the slow cooker. Add onion, carrots, and celery.
- Pour in chicken broth, milk, butter, salt, pepper, thyme, and garlic powder. Stir in cream of chicken soup.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
- About 30 minutes before serving, combine biscuit mix and 1/2 cup milk in a bowl until just combined.
- Drop spoonfuls of the dumpling batter onto the simmering chicken mixture.
- Cover and cook for another 20-30 minutes, or until dumplings are cooked through.
Notes
- For a thicker broth, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last hour of cooking.
- You can add other vegetables like peas or green beans during the last 30 minutes of cooking.
- Ensure dumplings are fully cooked by inserting a toothpick; it should come out clean.
