Delicious and easy roast potatoes with salty feta cheese.
Ingredients

- 1 kg potatoes, cut into chunks
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 100g feta cheese, crumbled
Instructions
- Preheat your oven to 200°C (400°F).
- Toss potato chunks with olive oil, oregano, garlic powder, salt, and pepper on a baking sheet.
- Roast for 30-40 minutes, or until golden and tender.
- Add crumbled feta cheese to the baking sheet during the last 5 minutes of roasting.
- Serve hot.
Notes
- For crispier potatoes, soak them in cold water for 30 minutes before roasting.
- You can add other herbs like rosemary or thyme.
- A squeeze of lemon juice before serving adds brightness.
