Ingredients

  • 1 cup French green lentils, rinsed
  • 3 cups water
  • 1 bay leaf
  • 1/2 cup finely chopped red onion
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped carrot
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste

Instructions

  1. Combine lentils, water, and bay leaf in a saucepan.
  2. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender but not mushy.
  3. Drain lentils and discard bay leaf. Allow to cool slightly.
  4. In a large bowl, combine cooled lentils, red onion, celery, carrot, and parsley.
  5. In a small bowl, whisk together olive oil, red wine vinegar, and Dijon mustard.
  6. Pour dressing over the lentil mixture and toss to combine.
  7. Season with salt and pepper to taste.
  8. Serve warm or at room temperature.
