Description
A refreshing and hearty French lentil salad with vegetables and a tangy vinaigrette.
Ingredients

- 1 cup French green lentils, rinsed
- 3 cups water
- 1 bay leaf
- 1/2 cup finely chopped red onion
- 1/2 cup finely chopped celery
- 1/2 cup finely chopped carrot
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper to taste
Instructions
- Combine lentils, water, and bay leaf in a saucepan.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender but not mushy.
- Drain lentils and discard bay leaf. Allow to cool slightly.
- In a large bowl, combine cooled lentils, red onion, celery, carrot, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, and Dijon mustard.
- Pour dressing over the lentil mixture and toss to combine.
- Season with salt and pepper to taste.
- Serve warm or at room temperature.
Notes
- French green lentils (Puy lentils) hold their shape well.
- You can add other vegetables like bell peppers or cucumber.
- For a richer flavor, add crumbled goat cheese or feta.
