A hearty and flavorful goulash made with ground beef and macaroni, perfect for a quick weeknight meal.

- 1 pound ground beef
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can diced tomatoes
- 4 cups beef broth
- 2 tablespoons paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 pound elbow macaroni
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Brown the ground beef in a large pot or Dutch oven over medium-high heat. Drain off any excess fat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Pour in the crushed tomatoes and diced tomatoes. Add the beef broth, paprika, oregano, salt, and pepper. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- Stir in the elbow macaroni. Cover and cook for another 10-15 minutes, or until the macaroni is tender, stirring occasionally.
- If desired, stir in the shredded cheddar cheese until melted.
- Serve hot.
Notes
- For a spicier goulash, add a pinch of cayenne pepper.
- You can substitute other pasta shapes for the elbow macaroni.
- Add frozen peas or corn in the last 5 minutes of cooking for extra vegetables.
