  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can diced tomatoes
  • 4 cups beef broth
  • 2 tablespoons paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 pound elbow macaroni
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium-high heat. Drain off any excess fat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the crushed tomatoes and diced tomatoes. Add the beef broth, paprika, oregano, salt, and pepper. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  6. Stir in the elbow macaroni. Cover and cook for another 10-15 minutes, or until the macaroni is tender, stirring occasionally.
  7. If desired, stir in the shredded cheddar cheese until melted.
  8. Serve hot.

Notes

  • For a spicier goulash, add a pinch of cayenne pepper.
  • You can substitute other pasta shapes for the elbow macaroni.
  • Add frozen peas or corn in the last 5 minutes of cooking for extra vegetables.
