  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup chicken or vegetable broth (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the potato chunks, olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Toss well to coat the potatoes evenly.
  3. Spread the seasoned potatoes in a single layer on a baking sheet.
  4. Roast for 40-50 minutes, or until the potatoes are tender and golden brown, flipping them halfway through.
  5. If using broth, add it to the baking sheet during the last 15 minutes of roasting.
  6. Garnish with fresh parsley before serving.
