Ingredients

- 4 cups chopped romaine lettuce
- 2 cups chopped spinach
- 1 cup chopped kale
- 1/2 cup chopped cucumber
- 1/2 cup chopped celery
- 1/4 cup chopped red onion
- 1/4 cup chopped bell pepper (any color)
- For the Green Goddess Dressing:
- 1/2 cup plain Greek yogurt
- 1/4 cup fresh parsley
- 1/4 cup fresh chives
- 2 tablespoons fresh basil
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Prepare the Green Goddess Dressing: Combine Greek yogurt, parsley, chives, basil, lemon juice, minced garlic, and olive oil in a blender or food processor.
- Blend until smooth and creamy. Season with salt and pepper to your liking.
- In a large bowl, combine the chopped romaine lettuce, spinach, and kale.
- Add the chopped cucumber, celery, red onion, and bell pepper to the bowl.
- Pour the Green Goddess Dressing over the salad.
- Toss gently to coat all the ingredients evenly.
- Serve immediately.
Notes
- For a thinner dressing, add a tablespoon or two of water.
- Add grilled chicken, shrimp, or chickpeas for added protein.
