Ingredients

  • 4 cups chopped romaine lettuce
  • 2 cups chopped spinach
  • 1 cup chopped kale
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped celery
  • 1/4 cup chopped red onion
  • 1/4 cup chopped bell pepper (any color)
  • For the Green Goddess Dressing:
  • 1/2 cup plain Greek yogurt
  • 1/4 cup fresh parsley
  • 1/4 cup fresh chives
  • 2 tablespoons fresh basil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Green Goddess Dressing: Combine Greek yogurt, parsley, chives, basil, lemon juice, minced garlic, and olive oil in a blender or food processor.
  2. Blend until smooth and creamy. Season with salt and pepper to your liking.
  3. In a large bowl, combine the chopped romaine lettuce, spinach, and kale.
  4. Add the chopped cucumber, celery, red onion, and bell pepper to the bowl.
  5. Pour the Green Goddess Dressing over the salad.
