Ingredients

  • 200g mixed salad leaves
  • 1 cucumber, sliced
  • 1 red bell pepper, sliced
  • 1/2 red onion, thinly sliced
  • 100g cherry tomatoes, halved
  • 50g Kalamata olives
  • For the dressing:
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Grill the halloumi slices for 2-3 minutes per side, until golden brown.
  2. In a large bowl, combine the mixed salad leaves, cucumber, red bell pepper, red onion, cherry tomatoes, and olives.
  3. Whisk together the olive oil, lemon juice, oregano, salt, and pepper for the dressing.
