- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 1/4 cup grated Parmesan cheese
- Fresh basil for garnish (optional)
Instructions
- Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute.
- Stir in diced tomatoes, oregano, and red pepper flakes (if using).
- Bring to a simmer and cook for 5-7 minutes, stirring occasionally.
- Season with salt and black pepper.
- Add the drained pasta to the skillet with the sauce.
- Toss to combine, adding a little reserved pasta water if needed to loosen the sauce.
- Stir in Parmesan cheese.
- Serve immediately, garnished with fresh basil if desired.
Notes
- For a creamier sauce, stir in a tablespoon of butter at the end.
- Add cooked protein like chicken or shrimp for a heartier meal.
- Experiment with different herbs like basil or parsley.
