Description
A quick and easy shrimp scampi recipe featuring a rich, buttery, garlicky sauce with lemon. Perfect for a fast yet elegant weeknight meal.

- 1 pound large shrimp, peeled and deveined
- 8 ounces linguine
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 cup dry white wine (optional)
- 1/4 cup lemon juice
- 2 tablespoons chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Cook linguine according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta cooks, melt butter in a large skillet over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute. Do not brown.
- Add shrimp to the skillet. Season with salt and pepper. Cook for 2-3 minutes per side, until pink and opaque.
- Pour in white wine (if using) and lemon juice. Bring to a simmer and cook for 1 minute.
- Add the cooked linguine and parsley to the skillet. Toss to coat. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
- Serve immediately.
Notes
- For a spicier dish, add red pepper flakes with the garlic.
- You can substitute other pasta shapes like fettuccine or spaghetti.
