Ingredients

- 2 lbs Russet potatoes, peeled and cubed
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 cups milk
- 1 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and black pepper to taste
- Optional toppings: sour cream, chives, extra cheese, extra bacon
Instructions
- Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in broth and milk, bringing to a simmer.
- Add potatoes to the pot. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until potatoes are tender.
- Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer soup in batches to a regular blender and blend until smooth, then return to the pot.
- Stir in heavy cream and cheddar cheese. Cook, stirring, until cheese is melted and soup is heated through. Do not boil.
- Season with salt and black pepper to taste.
- Serve hot, garnished with crumbled bacon and your desired toppings.
Notes
- For a thicker soup, use less broth or simmer uncovered for a few extra minutes before blending.
- Adjust seasoning to your preference.
- You can use different types of potatoes like Yukon Gold for a richer flavor.
