Ingredients

  • 1/4 cup vinaigrette dressing
  • 1/4 cup chopped cucumber
  • 1/4 cup chopped bell peppers
  • 1/4 cup canned chickpeas, rinsed and drained
  • 1/4 cup cooked quinoa
  • 1/4 cup chopped spinach
  • 1/4 cup grilled chicken, chopped
  • 2 tablespoons crumbled feta cheese

Instructions

  1. Pour the vinaigrette dressing into the bottom of a wide-mouth mason jar.
  2. Add the chopped cucumber and bell peppers on top of the dressing.
  3. Next, layer the chickpeas and quinoa.
  4. Add the chopped spinach.
  5. Top with the grilled chicken.
  6. Finish with the crumbled feta cheese.
  7. Secure the lid and refrigerate until ready to eat.
  8. When ready to serve, shake the jar well to distribute the dressing and pour into a bowl.

Notes

  • To prevent sogginess, place the dressing at the bottom and layer ingredients from wettest to driest, with greens and toppings on top.
