- 1/4 cup grilled chicken, chopped
- 2 tablespoons crumbled feta cheese
Instructions
- Pour the vinaigrette dressing into the bottom of a wide-mouth mason jar.
- Add the chopped cucumber and bell peppers on top of the dressing.
- Next, layer the chickpeas and quinoa.
- Add the chopped spinach.
- Top with the grilled chicken.
- Finish with the crumbled feta cheese.
- Secure the lid and refrigerate until ready to eat.
- When ready to serve, shake the jar well to distribute the dressing and pour into a bowl.
Notes
- To prevent sogginess, place the dressing at the bottom and layer ingredients from wettest to driest, with greens and toppings on top.
