- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 ounces pasta (penne, rotini, or farfalle work well)
- 4 cups chicken broth
- 1 cup milk
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- Salt and black pepper to taste
- 5 ounces fresh spinach
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides.
- Add pasta, chicken broth, milk, heavy cream, minced garlic, and Italian seasoning to the pot. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until pasta is al dente and most of the liquid has been absorbed, stirring occasionally.
- Stir in Parmesan cheese, salt, and pepper.
- Add fresh spinach to the pot and stir until it wilts, about 1-2 minutes.
- Serve immediately.
Notes
- For a thicker sauce, you can simmer uncovered for an extra few minutes at the end.
- Feel free to add other vegetables like mushrooms or peas along with the spinach.
