- 1 cup (2 sticks) unsalted butter
- 1/4 cup fresh sage leaves
- 2 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese, plus more for serving
- Salt, to taste
- Black pepper, freshly ground, to taste
Instructions
- Cook fettuccine according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
- While pasta cooks, melt butter in a large skillet over medium heat. Cook, swirling occasionally, until the butter turns a golden brown and smells nutty. This is brown butter.
- Add sage leaves to the brown butter and cook for about 1-2 minutes until crisp. Remove sage leaves with a slotted spoon and set aside.
- Add minced garlic to the brown butter and cook for 30 seconds until fragrant. Be careful not to burn the garlic.
- Pour in heavy cream and bring to a gentle simmer. Cook for 2-3 minutes, stirring occasionally, until the sauce slightly thickens.
- Stir in grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- Add the drained fettuccine to the skillet with the sauce. Toss to coat evenly. If the sauce is too thick, add a little of the reserved pasta water to reach your desired consistency.
- Serve immediately, garnished with the crispy sage leaves and extra Parmesan cheese.
