Ingredients

  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1/2 cup pecan halves
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Dressing:
  • 1/4 cup tahini
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon water (or more, to reach desired consistency)
  • 1 clove garlic, minced
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the pecan halves with olive oil, salt, and pepper on a baking sheet. Roast for 5-7 minutes, until lightly toasted. Watch them closely to prevent burning.
  3. While the pecans are roasting, prepare the dressing. In a small bowl, whisk together tahini, lemon juice, water, minced garlic, and salt until smooth and creamy. Add more water if needed to thin the dressing.
  4. In a large bowl, combine the cooked barley, rinsed chickpeas, and roasted pecans.
  5. Pour the lemon-tahini dressing over the bowl ingredients. Toss gently to coat everything evenly.
