- 1 large head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon garam masala
- 1 teaspoon cumin
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- Salt to taste
- 1 tablespoon butter
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 (15 ounce) can crushed tomatoes
- 1/2 cup heavy cream
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat oven to 400°F (200°C).
- Toss cauliflower florets with olive oil, garam masala, cumin, turmeric, cayenne pepper, and salt.
- Spread cauliflower on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned.
- Melt butter in a large skillet over medium heat. Add onion and cook until softened, about 5-7 minutes.
- Add garlic and ginger and cook for 1 minute more until fragrant.
- Stir in crushed tomatoes and bring to a simmer.
- Reduce heat and cook for 10 minutes, stirring occasionally.
- Stir in heavy cream and roasted cauliflower.
- Simmer for 5 minutes until heated through.
- Garnish with fresh cilantro before serving.
Notes
- For a spicier dish, add more cayenne pepper.
- Serve with rice or naan.
