- 1 medium butternut squash, peeled, seeded, and cubed
- 2 tablespoons olive oil
- Salt and freshly ground black pepper to taste
- 1/2 cup pomegranate seeds
- 1/4 cup chopped walnuts or pecans
- 1/4 cup crumbled feta or goat cheese (optional)
- For the Vinaigrette:
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon honey or maple syrup
- Salt and freshly ground black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the cubed butternut squash with 2 tablespoons of olive oil, salt, and pepper on a baking sheet.
- Roast for 20-25 minutes, or until tender and lightly caramelized.
- While the squash is roasting, prepare the vinaigrette. In a small bowl, whisk together 3 tablespoons of olive oil, balsamic vinegar, Dijon mustard, honey or maple syrup, salt, and pepper.
- In a large bowl, combine the roasted squash, pomegranate seeds, and chopped nuts.
- If using, add the crumbled cheese.
- Drizzle the vinaigrette over the salad and toss gently to combine.
- Serve immediately.
Notes
- For a sweeter squash, add a pinch of cinnamon to the roasting squash.
- Toasted nuts add an extra layer of flavor.
- You can substitute other seasonal fruits like cranberries or apples.
