Ingredients

- 2 tablespoons pumpkin seeds

Instructions
- In a large bowl, combine chopped chard leaves, quinoa, cherry tomatoes, red onion, cucumber, and bell pepper.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper to make the dressing.
- Pour the dressing over the chard mixture and toss gently to combine.
- Top with pumpkin seeds before serving.
