A hearty and tender pot roast made in a slow cooker, perfect for a comforting meal.

- 3–4 lb beef chuck roast
- 1 large onion, chopped
- 3 carrots, peeled and chopped
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup red wine (optional)
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and black pepper to taste
- 2 tbsp all-purpose flour (for thickening, optional)
- 1/4 cup cold water (for thickening, optional)
Instructions
- Season the beef chuck roast generously with salt and black pepper.
- Place the chopped onion, carrots, and celery in the bottom of the slow cooker.
- Place the seasoned roast on top of the vegetables.
- In a bowl, whisk together the beef broth, red wine (if using), Worcestershire sauce, thyme, and rosemary.
- Pour the liquid mixture over the roast.
- Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the beef is tender.
- About 30 minutes before serving, remove the roast and vegetables from the slow cooker.
- If desired, thicken the cooking liquid: whisk together the flour and cold water in a small bowl to make a slurry. Stir the slurry into the slow cooker liquid and cook on high for 15-30 minutes, or until thickened.
- Slice the pot roast and serve with the vegetables and gravy.
Notes
- For extra flavor, you can sear the roast on all sides in a hot skillet before placing it in the slow cooker.
- Adjust the cooking time based on your slow cooker and the size of the roast.
- You can add other vegetables like potatoes or parsnips.
- If you don’t use wine, you can substitute with an equal amount of extra beef broth.
