Ingredients

  • 1/2 cup extra virgin olive oil
  • 6 cloves garlic, thinly sliced
  • 1/4 teaspoon red pepper flakes (or more, to taste)
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook spaghetti in a large pot of salted boiling water according to package directions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium-low heat.
  3. Add the sliced garlic and red pepper flakes to the skillet. Cook gently, stirring occasionally, until the garlic is golden brown and fragrant, about 3-5 minutes. Be careful not to burn the garlic.
  4. Reserve about 1 cup of the pasta cooking water, then drain the spaghetti.
  5. Add the drained spaghetti to the skillet with the garlic and oil.
  6. Toss well to coat the pasta.
  7. Add about 1/2 cup of the reserved pasta water to the skillet and toss again. The starchy water will help create a light sauce. Add more water if needed to reach your desired consistency.
  8. Season with salt to taste.
  9. Serve immediately, garnished with fresh chopped parsley.

  • Adjust the amount of red pepper flakes to your spice preference.
  • For a richer flavor, you can add a splash of white wine when you add the pasta water.
