- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 teaspoon curry powder
- 1/2 teaspoon cayenne pepper (or to taste)

- 4 cups pumpkin puree
- 4 cups vegetable broth
- 1/2 cup creamy peanut butter
- 1 tablespoon soy sauce
- Salt and black pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion and cook until softened, about 5-7 minutes.
- Stir in garlic, ginger, curry powder, cayenne pepper, and cinnamon. Cook for 1 minute until fragrant.
- Add pumpkin puree and vegetable broth. Bring to a simmer.
- In a small bowl, whisk together peanut butter and soy sauce until smooth.
- Gradually whisk the peanut butter mixture into the simmering soup until well combined.
- Continue to simmer for 10-15 minutes, stirring occasionally, until flavors meld and soup is heated through.
- Season with salt and black pepper to taste.
- Serve hot, garnished with fresh cilantro if desired.
Notes
- For a smoother soup, use an immersion blender or regular blender to puree the soup before adding the peanut butter mixture.
- Adjust cayenne pepper for your desired level of spice.
- Add a splash of lime juice for extra brightness.
