Instructions
- Preheat your oven to 325°F (160°C). Grease and flour a 9×5 inch loaf pan or a bundt pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a small bowl, whisk together the milk and pureed strawberries.
- Gradually add the dry ingredients to the wet ingredients, alternating with the strawberry milk mixture. Begin and end with the dry ingredients, mixing until just combined after each addition. Do not overmix.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 60-75 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
- If desired, whisk together the powdered sugar and milk or lemon juice to create a glaze. Drizzle over the cooled cake.
