- 1.5 lbs ground beef
- 1 lb ground pork
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 egg
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1/2 tsp dried sage
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 1/4 cup chopped parsley
- 1/4 cup ketchup
- 2 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine ground beef and ground pork.
- In a separate small bowl, mix breadcrumbs and milk. Let stand for 5 minutes.
- Add the breadcrumb mixture, egg, chopped onion, minced garlic, salt, pepper, thyme, and sage to the meat mixture. Mix well.
- Divide the meat mixture in half. Press one half into the bottom of a loaf pan.
- In a medium bowl, combine the chopped celery, chopped carrots, chopped parsley, ketchup, Worcestershire sauce, and Dijon mustard. This is your stuffing mixture.
- Spread the stuffing mixture evenly over the meat layer in the loaf pan.
- Top with the remaining meat mixture, pressing gently to seal.
- Bake for 1 hour and 15 minutes, or until the internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before slicing and serving.
Notes
- For a moister meatloaf, you can add a bit more milk to the breadcrumb mixture.
- You can customize the stuffing with other vegetables or herbs you prefer.
- Ensure the meatloaf is cooked thoroughly to a safe internal temperature.
