Ingredients

  • 1.5 lbs ground beef
  • 1 lb ground pork
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1/2 tsp dried sage
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 1/4 cup chopped parsley
  • 1/4 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground beef and ground pork.
  3. In a separate small bowl, mix breadcrumbs and milk. Let stand for 5 minutes.
  4. Add the breadcrumb mixture, egg, chopped onion, minced garlic, salt, pepper, thyme, and sage to the meat mixture. Mix well.
  5. Divide the meat mixture in half. Press one half into the bottom of a loaf pan.
  6. In a medium bowl, combine the chopped celery, chopped carrots, chopped parsley, ketchup, Worcestershire sauce, and Dijon mustard. This is your stuffing mixture.
  7. Spread the stuffing mixture evenly over the meat layer in the loaf pan.
  8. Top with the remaining meat mixture, pressing gently to seal.
  9. Bake for 1 hour and 15 minutes, or until the internal temperature reaches 160°F (71°C).
  10. Let rest for 10 minutes before slicing and serving.

Notes

  • For a moister meatloaf, you can add a bit more milk to the breadcrumb mixture.
  • You can customize the stuffing with other vegetables or herbs you prefer.
