Description

Delicious Thai Coconut Meatballs, a flavorful appetizer or main dish.


Ingredients

  • 1 lb ground pork
  • 1/4 cup shredded unsweetened coconut
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1/2 tsp red pepper flakes
  • 1 egg
  • 1/4 cup breadcrumbs
  • 2 tbsp coconut oil for cooking

Instructions

  1. In a bowl, combine ground pork, shredded coconut, fish sauce, soy sauce, ginger, garlic, red pepper flakes, egg, and breadcrumbs.
  2. Mix well until all ingredients are evenly incorporated.
  3. Roll the mixture into small meatballs, about 1 inch in diameter.
  4. Heat coconut oil in a skillet over medium-high heat.
  5. Add meatballs to the skillet and cook, turning occasionally, until browned on all sides and cooked through, about 8-10 minutes.
  6. Serve hot.

Notes

  • For a spicier kick, add more red pepper flakes.
  • Serve with a sweet chili dipping sauce.
  • These can also be baked at 400°F (200°C) for 15-20 minutes.
