Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and pumpkin puree.
- In a separate bowl, whisk together the flour, baking soda, salt, pumpkin pie spice, and instant coffee granules (if using).
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the rolled oats and white chocolate chips (if using).
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are still slightly soft.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a stronger latte flavor, you can increase the instant coffee granules.
- Add a pinch of cinnamon to the dough for extra warmth.
