Ingredients

- 2 large cucumbers, thinly sliced
- 1/2 red onion, thinly sliced
- 1/4 cup white vinegar
- 2 tablespoons olive oil
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh dill or parsley, chopped (for garnish)
Instructions
- Combine sliced cucumbers and red onion in a medium bowl.
- In a small bowl, whisk together vinegar, olive oil, sugar, salt, and pepper.
- Pour the dressing over the cucumber and onion mixture.
- Toss gently to coat.
- Chill for at least 15 minutes before serving.
- Garnish with fresh herbs if desired.
Notes
- For a sweeter salad, add a little more sugar.
- Adjust vinegar and oil ratio to your preference.
- Can be made ahead of time and stored in the refrigerator.
