Description
A simple and hearty white chicken chili recipe cooked in a slow cooker. This recipe is perfect for a weeknight meal and is packed with flavor.

- 2 pounds boneless, skinless chicken breasts
- 1 large onion, chopped
- 2 (15 ounce) cans cannellini beans, rinsed and drained
- 1 (4 ounce) can diced green chilies
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional)
- 4 cups chicken broth
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, cilantro, avocado
Instructions
- Place chicken breasts in the slow cooker.
- Add chopped onion, cannellini beans, diced green chilies, chili powder, cumin, oregano, and cayenne pepper (if using) to the slow cooker.
- Pour in chicken broth.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and tender.
- Remove chicken from the slow cooker and shred it with two forks.
- Return shredded chicken to the slow cooker and stir to combine.
- Serve hot with your favorite toppings.
Notes
- For a thicker chili, you can mash some of the beans against the side of the slow cooker before serving.
- Adjust the cayenne pepper to your spice preference.
