- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 (15-ounce) cans cannellini beans, rinsed and drained
- 1 (4-ounce) can diced green chilies
- 4 cups chicken broth
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional)
- Salt and freshly ground black pepper to taste
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Add chicken pieces and cook until lightly browned on all sides.
- Stir in cannellini beans, diced green chilies, chicken broth, cumin, oregano, and cayenne pepper (if using).
- Bring to a boil, then reduce heat and simmer, covered, for at least 20 minutes, or until chicken is cooked through and flavors have melded.
- Season with salt and pepper to taste.
- Ladle chili into bowls. Top with shredded Monterey Jack cheese and chopped cilantro.
Notes
- For a creamier chili, you can blend a portion of the beans with some broth and stir it back into the pot.
- Serve with your favorite toppings like sour cream, avocado, or tortilla chips.
