- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper (optional)
- 4 cups chicken broth
- 2 (15-ounce) cans cannellini beans, rinsed and drained
- 2 (4-ounce) cans chopped green chilies
- 3 cups cooked shredded chicken
- 1/2 cup heavy cream or half-and-half
- Salt and black pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion and cook until softened, about 5-7 minutes.
- Stir in the minced garlic, cumin, oregano, chili powder, and cayenne pepper (if using). Cook for 1 minute more until fragrant.
- Pour in the chicken broth, cannellini beans, and chopped green chilies. Bring to a simmer.
- Add the shredded chicken and cook for 10-15 minutes, allowing the flavors to meld.
- Stir in the heavy cream or half-and-half. Heat through but do not boil.
- Season with salt and black pepper to taste.
- Serve hot, garnished with your favorite toppings.
Notes
- For a thicker chili, mash some of the cannellini beans against the side of the pot before adding the cream.
- You can use rotisserie chicken for a quicker preparation.
- Adjust the cayenne pepper for your desired level of heat.
